Putting dinner on the table is sometimes easier said than done- no matter how well we try to plan our meals you can never plan for everything!
A sick child, unexpected guests, appointments that run late, terrible traffic and just days where you have the blahs can wreak havoc on your meal planning! While it can be tempting to pick up fast food on these nights, with a little planning you can have an easy home cooked meal on the table in less time than it would take to make a take out run!
~~~Spaghetti with Pizza Breadsticks
Special Ingredients Needed: Pasta, Marinara Sauce, Frozen PizzaCook frozen pizza according to directions, meanwhile boil pasta and heat up sauce, slice pizza in strips, (we love California Pizza Kitchens)
~~~Quick Pasta Primavera
Special Ingredients Needed: Pasta, Frozen Veggies (I like Cascadian Farms California Blend), parmesan cheeseCook pasta according to directions, cook veggies according to directions, drain pasta toss pasta with veggies and add butter and salt to taste, top with parmesan.
~~~Quick Vegetarian TacosSpecial Ingredients Needed: Fantastic Foods Taco Filling, Taco ShellsHeat shells according to directions, fix filling according to directions. Top tacos with whatever you have on hand, lettuce, cheese, tomato, avocado, salsa, black beans, sour cream, corn, peppers- whatever you have available! No taco shells? Use tortilla chips to make a taco salad.
~~~Quick Quesadillas
Special Ingredients Needed: Tortillas, CheeseButter one side of a tortilla place it butter side down, top with cheese and any other topping you might have on hand (leftover chicken, pork, steak, veggies, etc.) Top with another tortilla (also buttered, butter side up) Heat until lightly toasted, flip and heat until toasted on other side and cheese is melted. Serve with chips and salsa.
Don’t forget to freeze your leftovers! Even if it’s only enough for one, that’s one homemade TV dinner, another quick alternative to take out!
